Many people had a doubt when Kim was going to sell Short Rip Soup and Shank Bone Soup at 4,000 won($3.8) in the limited number of 300 bowls in a day. Because people were shocked at the fact that he offers expensive Korean beef at a cheeper price than a cup of coffee. Soon, the shock was turned into a sensation as there was a long line of people in front of the restaurant. Kim said "it is our principle to provide top quality food at a reasonable price in the limited number. Without this we are not who we are today."
Kim is an old hand in various business fields. He started working in the interior and furniture field with only 300,000 won($280) in 1992. He once was swindled out of his money by an acquaintance and despaired in the cruelest reality of IMF. Turning over a new leaf, he invested 50 million won($48,000) in buying a fish stew recipe in the hope of a success in the food industry. He then was completely broke in 2004, yet prepared step by step his plan and finally opened Hanwoo Chunkook in April 2010. Kim said "it was the start of another hard time. Staff had friction with each other and when I thought it was solved then the chef quit. I realized that I have to be the one who develop the recipe and the system."
Short Rip Soup and Shank Bone Soup, boiled over 12 hours in the traditional way.
Kim did not have a special knowledge about food so he visited famous restaurants nationwide to taste it and took the food away to analyse by himself. After 3 years, he perfected his own recipe and introduced Short Rip Soup and Shank Bone Soup to the world. "I shortened my sleep and start preparing food from dawn. I'm confident that the soups are deep in taste as I make them by my heart with a variety of vegetables and medicinal herbs" said Kim.
With their carefully chosen ingredients and distinguishing taste, the online feedback praised the restaurant as 'the restaurant people eat Korean beef in a queue', 'the restaurant with the cheapest Korean beef', and 'the restaurant with the most delicious Korean beef'. However, many similar restaurants appeared by taking advantage of its popularity. "I didn't care much about it because our know-how cannot be achieved in such a short period of time. Actually, most of the restaurants closed not long after they opened" said Kim.
Meanwhile, Hanwoo Chunkook offers 600g of Korean sirloin at the cheap price of 29,000 won($26), and also beef feet, beef tail, beef cabbage, and barbecued beef at a cheaper price than the most butcher's. Recently, Kim has applied a patent for Anion Meat Maturing Device. The beef when showered by the device has no characteristic odors and the juice of the meat is alive. And Kim's research is still ongoing.
Finding a way of living together through franchise.
Currently, Hanwoo Chunkook has 40 franchised restaurants nationwide. Kim received a surge of inquiries about franchise everyday, but he does not say 'ok' to them easily. Because he knows that a lot of franchise are in danger of closing down even the head office due to their reckless expanding. Kim said "the key element of our franchise is that all the branches' price, taste and service must be the same. Also our principle is to deliver all of our know-how, remove the price bubble of opening, and to live together."
Increasing number of people are preparing to start a business to get through the economic hardships and retirement, and the Hanwoo Chunkook franchisees are not much different. But those who have chosen Hanwoo Chunkook praised in chorus the excellent system of the franchise. Kim said "if we finish constructing our own meat processing plant, all our branches can provide anion matured Korean beef at an even more rational price. Because we can distribute Korean beef at a cheaper price so that the branches can have higher profits while the customers can still enjoy it at a reasonal price."
