합리적인 가격으로 한우의 대중화를 선언하다
미국산 소고기가 정식으로 수입되면서 국내에서도 저렴한 가격으로 소고기가 유통되기 시작했지만 여전히 광우병에 대한 불안감을 떨칠 수 없다. 그 대안으로 한우보다 저렴하고 미국산보다 안심할 수 있는 호주산 청정소고기에 대한 소비가 크게 늘기도 했지만, 최근 한 방송에서 전문가 패널들은 호주 청정지역에서 방목된 소고기는 자국에서도 적은 양이 비싼 가격으로 유통되고 있는 실정으로 수익구조상 수출되지 않는다고 밝혀 충격을 안겨줬다. 문제는 소고기를 안전하고 건강하게 섭취하기 위해서 비싼 가격을 지불하게 되는 국내산 한우조차도 원산지 표시를 믿을 수 없다는 점이다. 이런 분위기 속에서 질 좋은 한우를 합리적인 가격으로 제공하고 있는 ‘한우천국’의 출연은 그래서 더없이 반가운 일이 아닐 수 없다.
파란만장한 사업 스토리 ‘한우로 대박 터지다’
김재옥 대표가 하루에 300그릇 한정으로 한우갈비탕과 우거지탕을 4000원에 판매한다고 했을 때 많은 사람들이 의구심을 품었다. 우리에게는 고급 식자재로 불리는 한우를 이용한 음식이 커피한잔 값도 안 되는 가격에 제공된다는 것이 너무도 파격적이었기 때문이다. 하지만 얼마가지 않아 그런 불신은 불식되었고, 한우천국 앞에 늘어선 줄은 더욱 길게 이어져만 갔다. “최고의 품질을 유지하면서도 저렴한 가격으로 손님들을 모시기 위해서 매일 한정된 양만 끊이는 것을 원칙으로 삼고 있습니다. 저희는 합리적인 가격을 추구하고 있지만 정직한 음식 맛이 아니었다면 오늘날의 성공은 없었다고 생각합니다.”
김 대표는 사업에 잔뼈가 굵은 사람이다. 92년도에 단돈 30만원을 쥐고 사업에 뛰어 들어 주로 인테리어와 가구업계에서 일을 했다. 하지만 지인에게 사기를 당하는 아픔도 겪었고, IMF 냉혹한 현실 앞에 좌절하기도 했다. 이후 심기일전하며 관심이 많았던 외식업으로 전향했던 그는 의욕이 앞서 5,000만원을 주고 매운탕 레시피를 사기도 하는 등 순탄치 않을 길을 걸게 된다. 이윽고 2004년 완벽히 빈손이 된 김 대표는 단계적으로 외식업을 준비하여 2010년 4월 한우천국을 처음 오픈하기에 이른다. “또 다른 고생의 시작이었죠. 직원들이 서로 다투어 영업에 차질이 생기고, 수습되었다 싶으면 주방장이 관두곤 했으니까요. 그때 깨달은 것이 대표가 직접 레시피를 개발하고 전반적인 시스템을 확보해야 한다는 것이었죠.”
전통방식으로 12시간 이상 끓인 한우갈비탕과 우거지탕
음식에 대한 전문적인 지식이 없었던 김 대표는 전국의 유명한 맛집을 찾아다니며 맛을 보기 시작했고, 음식을 포장해 와 직접 분석하기에 이르렀다. 그렇게 3년 만에 완성된 레시피를 바탕으로 그는 전통방식으로 12시간 이상을 끊여 일품 한우갈비탕과 우거지탕을 완성했다. “잠도 줄어가며 새벽부터 음식을 준비하고 있죠. 각종 야채와 한약재를 넣어 정성으로 조리하기 때문에 맛의 깊이가 깊을 수밖에 없다고 자부합니다.”
한우천국의 엄선된 재료와 차별화된 맛의 대한 찬사는 온라인에서 ‘한우 줄 서서 먹는 집’, ‘한우 가장 싼 집’, ‘한우 가장 맛있는 집’ 등으로 불리며 더 큰 명성으로 이어졌다. 하지만 그때부터 한우천국의 인기에 편승해 많은 유사업소들이 우후죽순 생겨나기 시작했다. “저희만의 노하우는 결코 단시간에 노력으로 이뤄낼 수 없는 것이라 믿었기 때문에 크게 신경 쓰이지 않았어요. 실제로 대부분의 업소들이 얼마가지 않아 폐업을 하고 말았죠.”
한편 한우천국은 맛 좋은 한우 등심을 600g에 2만9000원(평일)이라는 저렴한 가격에 판매하고 있으며, 우족, 꼬리, 한우사골, 불고기 등도 일반 정육점에 비해 월등히 저렴한 가격에 제공하여 더 큰 인기를 구가하고 있다. 최근 김 대표는 한우천국만의 ‘음이온 고기 숙성고’를 특허출원하기도 했다. 음이온 샤워를 받은 한우는 고기 특유의 잡냄새가 없고, 육즙이 살아 있는 것이 특징인데, 더 좋은 음식 맛을 위한 김 대표의 연구가 아직 끝나지 않았음을 알려주는 대목이다.
프랜차이즈 사업으로 상생의 길을 모색하다
현재 한우천국은 전국적으로 40여개의 가맹점을 거느리고 있다. 가맹에 관한 문의는 나날이 쇄도하고 있지만 김 대표는 언제는 신중한 자세로 개설을 허가하고 있다. 과감하게 프랜차이즈 사업에 도전했던 대다수의 맛집들은 무분별하게 점포수 늘리기에만 급급하여 본사조차도 존폐위기에 처하곤 했기 때문이다. “모든 가맹점은 본점과 가격, 맛, 서비스가 동일해야 한다는 것이 저희 프랜차이즈 사업의 핵심입니다. 또한 본사의 이익을 극대화하기 보다는 창업비용의 거품을 제거하고 본사의 모든 노하우를 전수함으로써 창업자와 상생한다는 방침입니다.”
계속되는 불경기를 돌파하기 위해 혹은 은퇴 후 새롭게 수익을 창출하기 위해 창업을 준비하고 있는 사람들이 크게 늘었고, 한우천국의 가맹점주 역시 저마다의 사연을 가지고 창업을 하게 되었다. 비정상적으로 늘고 있는 프랜차이즈 업체들 중에서도 한우천국을 선택한 가맹 점주들은 하나된 목소리로 한우천국의 우수한 프랜차이즈 시스템을 옹호했다. “이제 준비하고 있는 자체 육가공 공장까지 설립되게 되면, 모든 가맹점에 음이온 숙성한우를 더욱 합리적인 가격으로 공급 할 수 있게 됩니다. 비싸게만 인식되어 온 한우를 보다 저렴하게 유통함으로써 가맹점의 수익률은 더욱 높아지고, 고객들은 부담 없이 우리 한우의 맛을 즐길 수 있게 되길 기대하고 있습니다.”
한편 한우천국은 최근 한삿골이라는 자매브랜드를 런칭하여 벌써 매출 500만원이 넘는 대박 신화를 만들어가고 있다. 특히 한삿골은 중소형 규모로 운영되는 프랜차이즈로써 소자본 창업을 꿈꾸는 예비창업자들에게 새로운 희망의 증거가 될 것으로 전망된다.

The US beef import has been officially started and people now can enjoy beef at a cheap price. However, the concerns about mad cow disease is still prevalent. As an alternative, the consumption of Australian fresh beef has been increased as it is cheaper than Korean beef yet safer than US beef. Surprisingly, experts of the industry revealed in a TV programme that the Australian fresh beef is being distributed at an expensive price even in Australia. The problem now is that we can no longer trust the country of origin labeling even on the Korean beef. In this atmosphere, the advent of 'Hanwoo Chunkook' is welcoming more than ever.
Success with Korean beef after many turns and twists.
Many people had a doubt when Kim was going to sell Short Rip Soup and Shank Bone Soup at 4,000 won($3.8) in the limited number of 300 bowls in a day. Because people were shocked at the fact that he offers expensive Korean beef at a cheeper price than a cup of coffee. Soon, the shock was turned into a sensation as there was a long line of people in front of the restaurant. Kim said "it is our principle to provide top quality food at a reasonable price in the limited number. Without this we are not who we are today."
Kim is an old hand in various business fields. He started working in the interior and furniture field with only 300,000 won($280) in 1992. He once was swindled out of his money by an acquaintance and despaired in the cruelest reality of IMF. Turning over a new leaf, he invested 50 million won($48,000) in buying a fish stew recipe in the hope of a success in the food industry. He then was completely broke in 2004, yet prepared step by step his plan and finally opened Hanwoo Chunkook in April 2010. Kim said "it was the start of another hard time. Staff had friction with each other and when I thought it was solved then the chef quit. I realized that I have to be the one who develop the recipe and the system."
Short Rip Soup and Shank Bone Soup, boiled over 12 hours in the traditional way.
Kim did not have a special knowledge about food so he visited famous restaurants nationwide to taste it and took the food away to analyse by himself. After 3 years, he perfected his own recipe and introduced Short Rip Soup and Shank Bone Soup to the world. "I shortened my sleep and start preparing food from dawn. I'm confident that the soups are deep in taste as I make them by my heart with a variety of vegetables and medicinal herbs" said Kim.
With their carefully chosen ingredients and distinguishing taste, the online feedback praised the restaurant as 'the restaurant people eat Korean beef in a queue', 'the restaurant with the cheapest Korean beef', and 'the restaurant with the most delicious Korean beef'. However, many similar restaurants appeared by taking advantage of its popularity. "I didn't care much about it because our know-how cannot be achieved in such a short period of time. Actually, most of the restaurants closed not long after they opened" said Kim.
Meanwhile, Hanwoo Chunkook offers 600g of Korean sirloin at the cheap price of 29,000 won($26), and also beef feet, beef tail, beef cabbage, and barbecued beef at a cheaper price than the most butcher's. Recently, Kim has applied a patent for Anion Meat Maturing Device. The beef when showered by the device has no characteristic odors and the juice of the meat is alive. And Kim's research is still ongoing.
Finding a way of living together through franchise.
Currently, Hanwoo Chunkook has 40 franchised restaurants nationwide. Kim received a surge of inquiries about franchise everyday, but he does not say 'ok' to them easily. Because he knows that a lot of franchise are in danger of closing down even the head office due to their reckless expanding. Kim said "the key element of our franchise is that all the branches' price, taste and service must be the same. Also our principle is to deliver all of our know-how, remove the price bubble of opening, and to live together."
Increasing number of people are preparing to start a business to get through the economic hardships and retirement, and the Hanwoo Chunkook franchisees are not much different. But those who have chosen Hanwoo Chunkook praised in chorus the excellent system of the franchise. Kim said "if we finish constructing our own meat processing plant, all our branches can provide anion matured Korean beef at an even more rational price. Because we can distribute Korean beef at a cheaper price so that the branches can have higher profits while the customers can still enjoy it at a reasonal price."
Meanwhile, Hanwoo Chunkook has launched a subsidiary brand 'Hansotgol' and it already achieved the jackpot sales of 500 million won ($4.800). Hansotgol is a small & medium size franchise and is expected to be a hope for the people who wish to establish a business with little capital.
