“Bbongsogeum (mulberry salt) has long been consumed by monks and I learned the making technique from my teacher who used mulberry, kelp and shiitake to make it” says Monk Daejeon of Daebo Green Food. This traditional method has almost forgotten due to its hassling hand works but Daejeon reproduced it as ‘Jirisan Bbongsogeum’ through the same traditional way.  

He started to give out the salt to Buddhists and his acquaintances 10 years ago but the effect of the salt spread from mouth to mouth. Salt and water are most important ingredients to make Bbongsogeum. For this reason, he uses the top quality bay salt and fresh water in Jirisan Mountain. “The simpler and the more truthful of the food, the clearer to nature and the clearer to nature, the healthier to our body” says Daejeon. 

He uses dry mulberry leaves and stems and mixes them with shiitake, kelp, salicomia herbacea and lotus leaves to boil for 24 hours. The extract then is roasted with the bay salt for 4 to 5 hours to complete the making procedure.
