To make dried pollack delicious, the pollack must be frozen the moment it is hung to prevent the nutrients and flavor of the meat from escaping along with the water, so the temperature must be very low. The midday sun must thaw the pollack, and then freezing and thawing must be repeated more than 20 times.
During this process, good wind must pass through. Yongdaeri is an area that meets all of these difficult conditions in the winter, and this is a big reason why Yongdae is considered the home of dried pollack. Bukseorak developed ‘Wellbeing Gusida’, which enhances the taste of other foods with the natural taste of Yongdaeri dried pollack. Wellbeing Gusida is a product made with dried pollack powder and various vegetable seasonings as a base, preserving the taste of the raw ingredients while adding umami. The bones and flesh are what give the dish its light, savory flavor, so the fins and gills are removed and trimmed by hand, as they can make the dish bitter. Afterwards, the pollack is roasted at a high temperature to add a savory taste and is made into a fine powder. Then, various vegetable-based flavoring ingredients are mixed into it to form a liquid form. To make it easier to use, the company uses an air spray method to slowly transform it from a liquid state into small granules over a long period of time, and then releases it in hygienic packaging.
No MSG, synthetic additives or coloring
